The experts then knead the mixture with a cooking paddle until amalgamated.  Before it cools down, we make them into small pieces and mould them into the traditional shape.
Finally, we put each piece between two wafers. 

In this way we achieve the nougat with a crunchy texture that breaks almost effortlessly.  The result is a delicious, smooth sweetness.
